Fenghuang Dancong (Dragon Phoenix) is an exclusive tea. The dark brown, almost black leaves turn a deep green when seeped. The aroma of the brewed tea is amazingly fragrant. Fenghuang Dancong is an essential addition for the tea taster collection. This tea was cultivated to be brewed using less than 5 oz. of water per 3-4 grams of leaves.

If you do get it (as an every-day tea), I recommend you use the "gong fu" method of brewing, which mostly eliminates the risk of over-steeping and your tea's becoming bitter. I use enough leaves to fill 3/4 of a pot (100ml), 90℃ water,and get 3-4 infusions.

 

 

Description

 

Oolong tea is a traditional Chinese tea (Camellia sinensis)produced through a unique process including withering under the strong sun and oxidation before curling and twisting. Most oolong teas, especially those of fine quality, involve unique tea plant cultivars that are exclusively used for particular varieties. The degree of oxidation can range from 8% to 85%, depending on the variety and production style. Oolong is especially popular with tea connoisseurs of south China and Chinese expatriates overseas.

A widely used ceremonial method of steeping oolongs in China is called gongfucha. This method uses a small steeping vessel, such as a gaiwan or Yixing clay teapot, with more tea than usual for the amount of water used. Multiple short steeps of 20 seconds to 1 minute are performed; the tea is often served in one- to two-ounce tasting cups.

If stronger flavor is desired, add more tea, not time. Highlighted teas will taste bitter if infused longer than the suggested time.
